We do have what is called shaker sand which is a combination of sharp sand with some pea gravel mixed in (pea gravel that was smaller than normal and was screened out from the normal pea gravel. Hammer and chisel and/or angle grinder may be needed.but for a dry laid patio just with mortar in the joints, a flathead screwdriver will often be all that you need.
